Red, Yellow and Green Curry Paste

As I promised you last week, I’ll now reveal the recipes for my two other curry pastes! Just as a little reminder: last time we cooked a butternut squash curry with red curry paste: Butternut Squash Curry.

So, without further ado, here are the recipes:

Green

  1. Roast 1/2 tsp cumin and 1 tsp coriander seeds without oil until you can smell the aroma
  2. Grind the cooled off cumin and coriander seeds together with 10 white pepper seeds and some salt
  3. Peel and chop up 3 small shallots, 3 garlic cloves, 3 lemon grass stalks and 40g galangal
  4. Clean and chop up 4 coriander roots and 7 green small chilis and chop them up as well
  5. Prepare 3 dried kaffir lime leaves (remove the hard leaf veins in the middle and the stems and crumple the leaves up a bit)
  6. Mix everything together and either grind it with a mortar or just mix it in a blender
  7. Add some lime juice and/or water until the desired texture is achieved

As you can see in the picture, I also used the coriander leaves (I love coriander!). If you are not a vegetarian or vegan, you can add 1 tsp shrimp paste, but beware, you have to roast shrimp paste as well! Also, if you can’t find galangal, just use ginger, which works fine as a substitute.

Yellow

  1. Roast 1 tbsp cumin, 2 tbsp coriander seeds, 1 tbsp star anise, 1 tsp cinnamon and 1 tsp black pepper seeds without oil until you can smell the aroma
  2. Grind the cooled off spices and add some salt
  3. Peel or clean and chop up 3 small shallots, 3 garlic cloves, 1 small red chili, 3 cm ginger, 5cm fresh turmeric, 1 lemon grass stalk
  4. Mix everything together and add some lime juice and either grind it with a mortar or just mix it in a blender

Since I’ve had problems with getting fresh turmeric in the past, I learned that you can easily replace it with 1 tbsp turmeric powder. If you decide to use fresh turmeric be careful and wear gloves – my hands were yellow for a week and I looked like I had jaundice!

Red

  1. Roast 1 tsp cumin and 1 tsp coriander seeds without oil until you can smell the aroma
  2. Chop up 7 small red chillies, 2 sticks lemongrass, 3cm ginger, 3 shallots and 4 cloves of garlic
  3. Mix everything together and either grind it with a mortar or just mix it in a blender
  4. Add 2 tbsp of vegetable oil and/or water until the desired texture is achieved

In the end you should have around 600g of curry paste total. Depending on how much curry you consume, this should be enough to last about a month, I guess.

P.S.: Don’t be too anxious about the measurements. I once confused teaspoons with tablespoons and the pastes and subsequently curries turned out just as well.
